Description

A classic, soul-warming homemade chicken noodle soup recipe made with rotisserie chicken, fresh vegetables, and your choice of noodles. Ready in 40 minutes, perfect for meal prep or cozy nights.


Ingredients

1/2 Tablespoon butter

2 ribs celery, diced

3-4 large carrots, diced

1 clove garlic, minced

10 cups chicken stock or broth

1 teaspoon salt, to taste

1/2 teaspoon freshly ground black pepper, to taste

1/8 teaspoon dried rosemary, or more to taste

1/8 teaspoon dried thyme

1/8 teaspoon crushed red pepper flakes

1 batch homemade egg noodles or 4 cups dry egg noodles, farfalle, or other bite-size pasta

3 cups rotisserie chicken, shredded

1 teaspoon Better Than Bouillon chicken flavor, or chicken bouillon granules


Instructions

1. Add butter, diced celery and carrots to a large stock pot over medium-high heat. Saute for 3 minutes.

2. Add garlic and cook for another 30 seconds.

3. Pour in chicken stock and season with rosemary, thyme, crushed red pepper, salt, and pepper.

4. Taste and adjust seasonings. Add a spoonful of chicken bouillon for extra flavor if needed.

5. Bring the broth to a boil.

6. Add noodles and cook until just al dente.

7. Remove pot from heat once noodles are barely tender.

8. Add shredded rotisserie chicken to the pot and stir.

9. Taste again and adjust seasonings if necessary.

10. Serve warm and enjoy.

Notes

This soup stores well in the fridge for 4-5 days.

Best with homemade chicken stock using rotisserie chicken bones.

Freezer-friendly: Let it cool completely before freezing. Slightly undercook noodles if freezing.

Gluten-free: Use gluten-free noodles or gluten-free all-purpose flour for homemade egg noodles.

Reheat gently to preserve noodle texture.
