Description
This is the best chicken quesadilla recipe made with juicy chicken breast, melted Mexican cheese, and sautéed vegetables, all folded into golden, crispy tortillas. Perfect for any meal or occasion.
Ingredients
1 tbsp oil
1 lb chicken breast, cut into small pieces
1 tbsp taco seasoning
1/2 large bell pepper, diced
1/2 yellow onion, diced
2 tbsp unsalted butter
6 flour tortillas
2 cups Mozzarella cheese shreds
Instructions
1. Preheat a skillet with oil on medium heat. Add chicken and taco seasoning. Cook for 4 minutes.
2. Add bell pepper and onion. Cook another 5 minutes until chicken and vegetables are fully cooked.
3. Set chicken mixture aside. Heat a clean skillet with butter or oil.
4. Place a tortilla on the skillet, add cheese and chicken mixture to one half. Top with more cheese and fold over.
5. Cook until golden on one side, flip and cook the other side until golden and cheese is melted.
6. Repeat with remaining tortillas. Serve warm.
Notes
Use a mix of bell peppers for added color and flavor.
Don’t overstuff the quesadillas to ensure easy flipping.
Reheat leftovers in a skillet to maintain crispiness.
