Description

Ingredients

3 large boneless, skinless chicken breasts, sliced into thin cutlets

½ teaspoon salt

¼ teaspoon ground black pepper

6 tablespoons all-purpose flour

2 tablespoons olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

1 cup chicken stock

1 cup heavy cream

½ cup grated cheddar cheese

1 teaspoon chili flakes

¼ teaspoon oregano

¼ teaspoon thyme

⅓ cup chopped sundried tomatoes

1 tablespoon fresh basil leaves


Instructions

1. Season chicken with salt and pepper, then dredge in flour and shake off any excess.

2. In a large skillet, heat olive oil and melt butter over medium heat. Swirl to coat.

3. Brown chicken for 4–5 minutes per side until golden and cooked through. Set aside.

4. Sauté garlic until fragrant, about 1 minute. Add chicken stock and deglaze the pan.

5. Reduce heat to medium-low. Stir in heavy cream and cheddar cheese. Simmer to thicken.

6. Add chili flakes, oregano, thyme, and adjust seasoning. Add sundried tomatoes.

7. Return chicken to pan. Simmer in sauce for a few more minutes.

8. Garnish with chopped basil and serve warm over pasta or rice.

Notes

Cutlets can be store-bought or made by slicing chicken breasts in half.

Use freshly grated cheddar for better flavor and texture.

Add a bit of sundried tomato oil for enhanced richness.
