Description
A quick and flavorful stir-fry dish made with tender chicken, colorful bell peppers, onions, and a peppery savory sauce. Ready in just 25 minutes.
Ingredients
1 lb chicken breasts or thighs, sliced thin
1 tablespoon light soy sauce
1 tablespoon chicken broth
1 tablespoon cornstarch
1/2 cup chicken broth (for sauce)
2 tablespoons light soy sauce (for sauce)
2 teaspoons dark soy sauce
1 1/2 tablespoons sugar
1 tablespoon cornstarch (for sauce)
2 teaspoons freshly ground black pepper
1/8 teaspoon salt
2 tablespoons peanut oil or vegetable oil
1 tablespoon minced ginger
2 cloves garlic, minced
1/2 white onion, chopped
2 bell peppers, chopped (mixed colors work best)
Instructions
1. Slice chicken thinly against the grain and place in a bowl with soy sauce, chicken broth, and cornstarch. Mix gently and marinate for 10 to 15 minutes.
2. In a small bowl, combine chicken broth, soy sauces, sugar, cornstarch, and black pepper. Stir until smooth and set aside.
3. Heat 1 tablespoon oil in a skillet over medium-high heat. Spread chicken in a single layer and sear for 1 minute. Flip and cook another minute until lightly browned but not fully cooked. Remove and set aside.
4. Add remaining oil to the skillet. Stir-fry ginger and garlic until fragrant, then add onion and bell peppers. Cook for about 20 seconds.
5. Stir the prepared sauce again, pour into the skillet, and let it thicken. Return chicken to the pan and toss until everything is evenly coated. Transfer to a plate and serve hot.
Notes
Best served with steamed rice, noodles, or brown rice.
Adjust black pepper to taste for a milder or bolder flavor.
Can substitute chicken with beef, shrimp, or tofu.
