A cheesy, spicy, and comforting buffalo chicken lasagna recipe with layers of shredded chicken, Buffalo sauce, creamy ricotta, and gooey mozzarella.
Ingredients
2 cups cooked shredded chicken breast
1 (1-ounce) ranch dressing packet
3/4 cup Buffalo sauce (use alcohol-free, halal-friendly brands like Noble Made or Tessemae’s)
3 ounces blue cheese crumbles
15 ounces ricotta cheese
1 pound oven-ready lasagna noodles
3 cups shredded mozzarella cheese, divided
Instructions
1. Preheat oven to 350°F.
2. Spray a 9×13-inch baking dish with nonstick cooking spray.
3. In a large bowl, add shredded chicken, ranch dressing packet, and Buffalo sauce. Mix to combine.
4. In another bowl, add blue cheese, ricotta, and 1 cup of mozzarella cheese. Stir to combine.
5. Spread half the chicken mixture in the baking dish. Top with 4 lasagna noodles. Spread half the ricotta mixture over noodles.
6. Repeat layers with remaining chicken, noodles, and ricotta mixture.
7. Finish with a final layer of noodles and 2 cups mozzarella cheese on top.
8. Bake uncovered for 30 minutes, until bubbly and golden.
9. Let rest 5–10 minutes before slicing and serving.
Notes
Leftovers taste even better the next day as flavors continue to meld.
You can add vegetables like spinach, zucchini, or bell peppers for extra nutrition.
For spicier lasagna, choose a hotter Buffalo sauce or add a pinch of cayenne pepper.
