Description

A juicy, flavorful Cheese-Stuffed Turkey Meatloaf made with lean ground turkey, Italian-style breadcrumbs, milk, eggs, and creamy Colby cheese. This family favorite features a molten cheesy center and a tangy ketchup glaze for a comforting meal that’s hearty yet light.


Ingredients

2 pounds ground turkey

1 cup milk

1 cup Progresso Italian Style Breadcrumbs

2 large eggs

1 teaspoon salt

1/4 teaspoon black pepper

3/4 pound Tillamook Colby Cheese or Cabot Colby Cheese, cut into 1/2-inch cubes

1/2 cup ketchup


Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, mix together ground turkey, milk, breadcrumbs, eggs, salt, and pepper until evenly combined. Avoid overmixing to keep the loaf tender.

3. Fold the Colby cheese cubes gently into the turkey mixture so that the cheese is evenly distributed throughout.

4. Transfer the mixture to a loaf pan and press lightly to form an even shape.

5. Spread a thin layer of ketchup over the top to create a flavorful glaze.

6. Bake for about 1 hour, or until the internal temperature reaches 180°F (85°C).

7. Remove from the oven and let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute and the cheese to set slightly.

8. Slice and serve warm for the perfect combination of juicy turkey and melted cheese.

Notes

For breadcrumbs, use alcohol-free, seasoned brands like Progresso Italian Style Breadcrumbs or 365 Whole Foods Market Italian Breadcrumbs.

Tillamook or Cabot Colby cheeses are ideal for this recipe due to their creamy melt and mild flavor.

You can substitute Colby with cheddar, mozzarella, or Monterey Jack for a different flavor twist.

To add heat, mix in a teaspoon of chili flakes or a few drops of Texas Pete Original Hot Sauce or Crystal Hot Sauce.

If preferred, shape the loaf freeform on a foil-lined baking sheet for a crispier crust instead of using a loaf pan.
