Description
Crispy on the outside, juicy on the inside, these cheesy chicken fritters are a family favorite. Made with diced chicken breast, mozzarella, dill, and a creamy garlic aioli dip, they are perfect for weeknight dinners, snacks, or appetizers.
Ingredients
1 1/2 lbs chicken breasts (3 large), diced
2 large eggs
1/3 cup mayonnaise
1/3 cup all-purpose flour (or cornstarch or potato starch for gluten-free)
4 oz mozzarella cheese (1 1/3 cups shredded)
1 1/2 Tbsp chopped fresh dill
1/2 tsp salt (or to taste)
1/8 tsp black pepper
2 Tbsp extra light olive oil (or any high-heat cooking oil)
Garlic Aioli Dip (optional):
1/3 cup mayonnaise
1 garlic clove, pressed
1/2 Tbsp lemon juice
1/4 tsp salt
1/8 tsp black pepper
Instructions
1. Dice chicken into 1/3-inch thick pieces and place in a large mixing bowl. If partially frozen, it will be easier to slice.
2. Add eggs, mayonnaise, flour (or starch), mozzarella, dill, salt, and black pepper to the bowl. Mix until well combined.
3. Cover and refrigerate for at least 2 hours or overnight to let flavors meld and batter firm up.
4. Heat oil in a non-stick pan over medium heat. Scoop heaping tablespoons of the mixture into the pan, flatten slightly, and sauté uncovered 3-4 minutes on the first side. Flip and cook another 3 minutes, until golden brown and chicken is cooked through.
5. To make the garlic aioli (optional), stir mayonnaise, pressed garlic, lemon juice, salt, and black pepper together in a small bowl until smooth.
6. Serve fritters warm with garlic aioli or your favorite dip.
Notes
Cut one fritter in half to check doneness — the chicken should be completely white inside.
If fritters are browning too quickly, reduce heat slightly.
Can be baked at 400°F for 18–20 minutes or air fried at 375°F for 10–12 minutes for lighter alternatives.
