Description

Crispy, golden chicken cordon bleu stuffed with melted Swiss cheese and savory turkey or beef ham, coated in buttery crumbs, and served with a creamy mustard sauce.


Ingredients

4 boneless skinless chicken breasts, about 2 pounds

8 thin slices beef ham or turkey ham

8 oz Swiss cheese slices or shredded (Tillamook, Cabot, Organic Valley Baby Swiss, or Kerrygold Dubliner)

Salt and freshly ground black pepper

3 cups corn flakes cereal, crushed (or substitute breadcrumbs)

6 tablespoons butter, melted

For the sauce:

1 cup mayonnaise

1-2 teaspoons yellow mustard, to taste


Instructions

1. Pat chicken breasts dry, slice each in half horizontally, creating 8 thin cutlets.

2. Place cutlets between plastic wrap and pound evenly with a rolling pin or mallet.

3. Top each cutlet with a slice of ham and Swiss cheese, then roll tightly, tucking in sides.

4. Wrap each roll in plastic wrap, twist ends to secure, and refrigerate 30 minutes or up to 1 day.

5. Preheat oven to 400°F. Season rolls with salt and pepper.

6. Pulse corn flakes into fine crumbs, place in shallow dish. Melt butter in another dish.

7. Dip each roll in melted butter, then coat in crumbs. Transfer to greased baking sheet.

8. Bake for about 30 minutes, until internal temperature reaches 160°F.

9. Stir mayonnaise and mustard together to make the sauce. Serve with chicken rolls.

Notes

Cheese Variations: Swap Swiss cheese for mozzarella, provolone, or Kerrygold Dubliner.

Crust Options: Use Panko breadcrumbs, crushed crackers, or gluten-free crumbs.

Make-Ahead: Prepare chicken rolls through wrapping step, refrigerate for 1 day or freeze up to 3 months.
