Description
Classic chicken fried rice made with tender chicken, fluffy rice, eggs, and vegetables. Quick, delicious, and perfect for weeknight dinners.
Ingredients
1 large egg
1 tablespoon water
1 tablespoon butter
1 tablespoon vegetable oil
1 medium onion, chopped
2 cups cooked white rice, cold
1 cup cooked, chopped chicken meat
2 tablespoons soy sauce
1 teaspoon ground black pepper or to taste
Optional: diced vegetables like carrots, peas, or bell peppers
Instructions
1. Beat egg and water together in a small bowl. Melt butter in a large skillet or wok over medium-low heat and add the egg. Cook without stirring for 1 to 2 minutes, then remove and cut into thin shreds.
2. Heat vegetable oil in the same skillet. Add chopped onion and cook until soft, about 3 minutes.
3. Stir in cold cooked rice and chopped chicken. Cook while stirring for about 5 minutes.
4. Add soy sauce and black pepper, mixing until rice is evenly coated.
5. Stir in shredded egg and cook for 1 to 2 minutes until everything is hot. Serve immediately.
Notes
You can add diced vegetables such as carrots, peas, or bell peppers for extra color and nutrition.
Use leftover rice that has been chilled overnight for the best texture.
Try finishing with a drizzle of sesame oil or garnish with fresh green onions for added flavor.
