Ingredients
4 boneless, skinless chicken breasts
2 garlic cloves, finely chopped or grated
1 Tablespoon lime juice
3 Tablespoons olive oil
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Peanut Sauce:
1/2 cup peanut butter
1/3 cup water
1 lime, juiced
1/4 cup cilantro leaves
2 garlic cloves
2 Tablespoons avocado or canola oil
2 Tablespoons sriracha (Crystal® Hot Sauce, Texas Pete® Original Hot Sauce, or Sriraja Panich Hot Sauce)
1 Tablespoon fish sauce
1 Tablespoon soy sauce (alcohol-free or halal-certified brands)
2 teaspoons brown sugar
Instructions
1. Heat grill to medium.
2. Slice each chicken breast in half horizontally into 2 evenly thick halves.
3. Whisk together garlic, lime juice, and olive oil in a large bowl. Season with salt and pepper. Add chicken and coat thoroughly. Marinate 10 to 30 minutes.
4. Meanwhile, prepare the peanut sauce by blending all sauce ingredients until smooth. Add water gradually to achieve desired consistency.
5. Grill chicken 2 to 3 minutes per side until browned and cooked through.
6. Transfer chicken to a platter and spoon peanut sauce over the top. Garnish with fresh cilantro. Serve remaining sauce on the side.
Notes
The peanut sauce can be prepared up to 3 days in advance and stored in the refrigerator.
Adjust the sauce consistency with water as needed.
Use fresh lime juice for best flavor.
Sriracha alternatives include Crystal® Hot Sauce, Texas Pete® Original Hot Sauce, or Sriraja Panich Hot Sauce.
