Ingredients
For the Frosting:
4 oz plain full-fat cream cheese (Philadelphia Original or Organic Valley Cream Cheese), softened
2 tsp alcohol-free vanilla flavor (Simply Organic Alcohol-Free or Watkins Clear Vanilla Flavor)
5 oz powdered sugar (about 1 1/4 cups)
For the Filling:
4 oz unsalted butter, softened
6 oz light brown sugar (3/4 cup, gently packed)
1/2 oz ground cinnamon (2 tbsp)
1/2 tsp grated nutmeg
1/4 tsp kosher salt
4 oz toasted pecan halves, chopped
For the Dough:
16 oz all-purpose flour (about 3 1/2 cups), such as Gold Medal
3 1/2 oz granulated sugar (1/2 cup)
2 tsp instant yeast (SAF brand)
1 3/4 tsp kosher salt
1/4 tsp baking soda
4 oz unsalted butter
4 oz milk
8 oz plain unsweetened Greek yogurt (Chobani or FAGE)
Instructions
1. Prepare the frosting by beating cream cheese and vanilla flavor with half of the powdered sugar using a stand mixer on low speed. Gradually add the remaining sugar and beat on medium speed until creamy and pale. Set aside.
2. In the same bowl, mix butter, brown sugar, cinnamon, nutmeg, and salt for the filling. Beat until light and creamy. Fold in the pecans and set aside.
3. For the dough, whisk flour, sugar, yeast, salt, and baking soda in a bowl. In a small saucepan, melt butter, stir in milk and yogurt, and warm to 80°F (27°C). Add to the dry ingredients and mix to form a dough.
4. Knead with a dough hook for about 20 minutes until smooth and elastic. Cover and let rise for 90 minutes, until doubled in size.
5. Roll dough into a 13-inch square, spread the cinnamon filling evenly, sprinkle pecans, and roll tightly into a log. Slice into 12 rolls using unflavored dental floss or twine.
6. Place rolls in a parchment-lined 9×13-inch pan, cover, and refrigerate overnight or up to 48 hours.
7. Preheat oven to 350°F (180°C). Bake covered for 45 minutes, uncover and bake an additional 15 minutes until golden.
8. Frost the warm rolls with cream cheese frosting and serve immediately on a large board with toppings like fruit, nuts, or sauces.
