Description

This hearty Country Meatloaf with Mashed Potatoes combines savory ground beef, sweet corn, and creamy mashed potatoes for a comforting, all-in-one meal. Perfect for family dinners, it’s easy to prepare and full of flavor.


Ingredients

2 pounds ground beef

½ cup chopped onion

2 cloves garlic, chopped

1 can corn, drained

⅓ cup ketchup

1 teaspoon kosher salt

½ teaspoon ground black pepper

2 pounds Russet or Yukon Gold potatoes

¼ cup butter

½ cup warm milk

Optional: fresh parsley or chives for garnish


Instructions

1. Preheat oven to 350°F and lightly grease a 9×13-inch baking dish with cooking spray.

2. In a skillet over medium heat, sauté onions and garlic until translucent and aromatic.

3. Add ground beef to the skillet and brown thoroughly, then drain excess juices.

4. Stir in corn, ketchup, salt, and black pepper until evenly combined.

5. Press the beef mixture into the prepared baking dish to form an even layer.

6. Boil peeled and chopped potatoes in salted water until tender, about 15–20 minutes, then drain.

7. Mash the potatoes with butter and warm milk until smooth and creamy. Season with salt and pepper.

8. Carefully spread mashed potatoes over the meatloaf base and smooth the top evenly.

9. Optional: brush the potato layer with melted butter for a golden finish.

10. Bake uncovered for 30 minutes or until the meat is cooked through and the potatoes are lightly golden.

11. Let rest for 5–10 minutes before slicing and serving.

Notes

Use fresh, quality ground beef for the best flavor and texture.

Do not overmix the meat mixture to keep the meatloaf tender.

Leftovers can be stored in an airtight container in the refrigerator for up to four days or frozen for up to three months.

Reheat in the oven at 325°F covered with foil, or microwave single servings with a splash of milk or butter to restore creaminess.
