Description

A rich and flavorful creamy Cajun chicken pasta recipe made with tender chicken, linguine, a silky Cajun-spiced cream sauce, and fresh herbs. Perfect for a quick weeknight dinner or a special family meal.


Ingredients

8 oz linguine pasta

2 boneless skinless chicken breasts

2 tsp olive oil

2 Tbsp unsalted butter

1 1/2 to 2 Tbsp Cajun seasoning (adjust to taste depending on brand)

3 garlic cloves, minced

2/3 cup diced tomatoes

1 1/2 cups heavy whipping cream

1/2 cup grated cheese made with vegetarian rennet (Cabot or Tillamook recommended)

2 Tbsp fresh parsley, finely chopped


Instructions

1. Bring a large pot of salted water to a boil. Cook linguine until al dente according to package directions. Reserve 1/2 cup of pasta water, then drain and keep warm.

2. Pound chicken breasts to even thickness. Season with 1 1/2 Tbsp Cajun seasoning.

3. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and cooked through, 165°F internal temperature. Transfer to a cutting board, slice into strips, and cover to keep warm.

4. In the same skillet, melt butter. Add minced garlic and sauté 30–60 seconds until fragrant.

5. Stir in diced tomatoes and cook 2 minutes.

6. Pour in heavy cream, remaining Cajun seasoning, and grated cheese. Simmer gently until sauce thickens.

7. Add sliced chicken and cooked pasta to the sauce. Toss to combine. Use reserved pasta water as needed to loosen the sauce.

8. Serve warm, topped with parsley and extra grated cheese.

Notes

Avoid cast iron or copper pans when making creamy sauces with tomato, as they may react and cause graininess.

If your Cajun seasoning blend is very salty, reduce the amount and adjust to taste.

Optional add-ins: sautéed bell peppers, spinach, or mushrooms for extra flavor and nutrition.
