Instructions
Heat olive oil in a large pot over medium high heat and add the chopped onion, cooking until soft and translucent
Add garlic and cook briefly until fragrant while stirring constantly
Pour in chicken broth and stir in green chilies, cumin, cayenne, paprika, oregano, lime juice, salt, and black pepper
Allow the mixture to heat through gently so the spices bloom
Drain and rinse the beans thoroughly
Blend a portion of the beans with a small splash of broth until smooth
Add both the blended beans and whole beans to the pot along with the corn
Bring the soup to a gentle simmer and cook uncovered until thickened
Remove the pot from heat and stir in the shredded cooked chicken
Add sour cream or Greek yogurt slowly and mix until fully incorporated
Taste and adjust seasoning as needed
Serve hot with desired toppings
Notes
For a thicker texture, blend more of the beans before adding them to the soup.
Always add the creamy ingredient after removing the pot from heat to maintain a smooth texture.
The soup will naturally thicken as it cools, so adjust consistency before serving.
Rotisserie chicken works well and saves time.
Stir occasionally during simmering to prevent sticking on the bottom of the pot.
