Ingredients

Coleman’s Dry Mustard Powder

Paprika

Salt

Black pepper

All purpose flour

Cooked chicken, diced or shredded

Corn kernels, fresh, frozen, or canned and drained

Potatoes, diced

Unsalted chicken stock

Whole milk

Heavy cream

Turkey bacon, cooked and chopped

Green onions, sliced


Instructions

1. Melt the butter in a large stock pot over medium heat and add the onion, bell pepper, and garlic, stirring until softened and fragrant

2. Add thyme, garlic powder, dry mustard powder, paprika, salt, and pepper, stirring to coat the vegetables evenly

3. Sprinkle in the flour and cook while stirring until the mixture becomes lightly golden and smooth

4. Add the cooked chicken, corn, and diced potatoes, gently mixing to combine everything

5. Slowly pour in the chicken stock followed by the milk and cream, stirring well and scraping the bottom of the pot

6. Bring the soup to a gentle simmer and cook until the potatoes are tender and the soup thickens

7. Blend about half of the soup using an immersion blender or standard blender, then return it to the pot

8. Simmer gently until the soup reaches a creamy, velvety consistency and adjust seasoning if needed

9. Serve hot and garnish with turkey bacon and green onions if desired

Notes

Use unsalted chicken stock to better control the overall seasoning

Blend only part of the soup to keep a mix of creamy and chunky textures

Stir frequently after adding dairy to prevent sticking or scorching

Fresh corn adds sweetness when in season, but frozen corn works just as well

Allow the soup to rest briefly before serving so the flavors settle
