Ingredients

Boneless skinless chicken breasts sliced into thin cutlets

Garlic powder

Dried oregano or Italian seasoning

Smoked paprika

Fine sea salt

Freshly ground black pepper

Unsalted butter

Olive oil

Baby Bella mushrooms sliced

Yellow onion finely minced

Fresh garlic cloves minced

Heavy cream

Finely grated Parmesan style cheese such as Cabot Grated Parmesan or Tillamook Grated Parmesan

Fresh herbs such as parsley or thyme optional


Instructions

1. Slice the chicken breasts horizontally into even cutlets and pat them dry with paper towels then season both sides with garlic powder oregano smoked paprika salt and pepper

2. Heat butter and olive oil together in a large skillet over medium high heat until melted and hot

3. Add the seasoned chicken to the skillet and cook until golden brown on both sides and fully cooked through then remove and set aside

4. Add mushrooms and minced onion to the same skillet and cook while stirring until softened and lightly browned

5. Stir in the minced garlic and cook briefly until fragrant while keeping the heat moderate

6. Lower the heat and slowly add the heavy cream stirring to combine and loosen the pan drippings

7. Add the grated Parmesan style cheese and stir until melted and the sauce becomes smooth and slightly thickened

8. Return the chicken and its juices to the skillet and gently simmer until everything is well coated and heated through

9. Finish with fresh herbs if using and remove from heat before serving

Notes

Keep the heat low once the cream is added to prevent the sauce from separating

Freshly grated cheese melts more smoothly than pre shredded varieties

If the sauce thickens too much add a small splash of cream while reheating

This dish is best served immediately while the sauce is silky and warm
