Ingredients

Italian style beef sausage with casings removed

Unsalted butter

Yellow onion finely chopped

Celery stalks finely chopped

Fresh garlic cloves minced

All purpose flour

Low sodium chicken broth

Half and half

Crystal Worcestershire Sauce

Crushed red pepper flakes optional

Russet potatoes peeled and diced

Salt

Black pepper


Instructions

1. Heat a large heavy bottomed pot over medium high heat and add the Italian style beef sausage, cook while breaking it apart until browned and fully cooked, then transfer to a plate and leave a small amount of fat in the pot

2. Add butter to the pot and once melted stir in the chopped onion and celery, cook until softened and fragrant while scraping the bottom of the pot

3. Stir in the minced garlic and sprinkle in the flour, cook while stirring until the mixture is smooth and lightly golden

4. Slowly whisk in the chicken broth until smooth and no lumps remain

5. Add the half and half, Worcestershire sauce, crushed red pepper flakes, diced potatoes, and cooked sausage, then stir to combine

6. Increase heat until the soup gently boils, then reduce heat and let it simmer with the lid slightly open until potatoes are tender and the soup thickens

7. Stir occasionally to prevent sticking and ensure even cooking

8. Season with salt and black pepper to taste and remove from heat before serving
