Description

This classic forgotten chicken recipe is a creamy, oven-baked comfort meal made with pantry staples. Perfect for busy nights when you want a warm, hearty dinner with minimal effort.


Ingredients

2 cups minute rice

1 can cream of chicken soup

1 can cream of celery soup

1 can water (use empty soup can)

5 boneless skinless chicken breasts (about 1 1/2 lbs)

1 envelope onion soup mix

Butter, for greasing the dish


Instructions

1. Preheat oven to 350°F and grease a 9×13-inch baking dish with butter.

2. In a medium bowl, mix cream of chicken soup, cream of celery soup, water, and minute rice until combined.

3. Transfer the rice and soup mixture into the greased baking dish and spread evenly.

4. Place chicken breasts on top of the rice mixture.

5. Sprinkle the onion soup mix evenly over the chicken and rice.

6. Cover tightly with foil and bake for 90 minutes, without uncovering during the cook time.

7. Remove from oven and let rest for 5 minutes before serving.

Notes

Do not use regular long-grain rice, as it won’t cook properly.

You can substitute cream of mushroom soup for the cream of celery if needed.

Add frozen vegetables to the rice mixture for a one-dish meal.

Leftovers store well in the fridge for up to 4 days and can be frozen.
