Description

Ingredients

2 tablespoons olive oil

2 pounds yellow onions, thinly sliced

1/8 teaspoon baking soda

1/2 cup unseasoned dried breadcrumbs

1/2 cup whole or 2% milk

2 cloves garlic, minced

2 teaspoons Crystal Worcestershire Sauce or Alcohol-Free Alternatives

1 1/2 teaspoons kosher salt

1/4 teaspoon freshly ground black pepper

2 pounds ground beef

2 large eggs, lightly beaten

1 cup Tillamook Swiss Cheese or Cabot Creamery Swiss Cheese, shredded


Instructions

1. Preheat the oven to 350°F and line a 9×5-inch loaf pan with aluminum foil.

2. Heat olive oil in a large heavy-bottomed pot over medium-high heat until shimmering. Add onions and baking soda; cook for 15 minutes, stirring occasionally. Continue cooking for 10-15 minutes, stirring frequently until onions are deep golden brown.

3. Place breadcrumbs in a large bowl and pour in milk, letting it soak. Add caramelized onions (reserving some for topping), garlic, Worcestershire sauce, salt, and pepper; stir to combine.

4. Add ground beef and eggs; mix gently using your hands. Transfer mixture to prepared loaf pan, pressing into an even layer.

5. Bake for 55-60 minutes until the center reaches 165°F. Remove from oven.

6. Sprinkle reserved onions and shredded cheese over the top. Broil for 2 minutes until cheese is bubbly and browned at edges.

7. Let meatloaf cool in pan for 15 minutes. Lift out using foil, slice, and serve.
