Ingredients
Skin on salmon filet, fresh and cut into chunks
Unsalted butter
Large leek, sliced and well rinsed
Water or good quality fish stock
Russet potatoes, peeled and diced
Large carrot, thinly sliced
Fresh dill, finely chopped and divided
Heavy cream
Allspice
Salt
Black pepper
Instructions
1. Remove the skin from the salmon filet and cut the fish into generous bite sized pieces while carefully removing any pin bones
2. Place the salmon skin into a small saucepan with water and gently simmer to extract flavor then strain and reserve the broth
3. Melt the butter in a large soup pot over medium heat and slowly cook the sliced leeks until soft and translucent without browning
4. Add the prepared broth to the pot along with the potatoes carrots and half of the chopped dill and gently simmer until the vegetables are just tender
5. Lower the heat and carefully add the salmon pieces to the soup followed by the cream and allspice stirring gently
6. Allow the soup to cook softly until the salmon is opaque and tender then remove from heat
7. Finish by stirring in the remaining dill and seasoning with salt and black pepper to taste
Notes
Keep the heat low after adding the salmon to prevent the fish from becoming firm or dry
Fresh dill is essential for authentic flavor and should not be skipped
Fish stock or clam broth can be used instead of water for deeper flavor
Hot smoked salmon may be used for a richer taste but should be added near the end
