Description

This Homemade Arby’s Chicken Salad Recipe is a creamy, crunchy blend of chicken breast, apples, grapes, celery, and pecans tossed in a light mayo-yogurt dressing. Perfect for quick lunches, meal prep, or summer picnics.

Ingredients

4 cups chicken breast cooked and cut into chunks

1 cup red grapes halved or quartered

1 cup red apple chopped

1 cup celery chopped

½ cup pecans chopped

½ cup mayonnaise

½ cup plain lowfat yogurt

Salt to taste

Pepper to taste

Instructions

1. Mix the mayonnaise and yogurt in a small bowl until smooth.

2. In a large bowl, combine the chicken breast, grapes, apples, celery, and pecans.

3. Pour the dressing over the mixture and toss gently to coat all ingredients.

4. Add salt and pepper to taste, then mix again gently.

5. Serve chilled on a bed of lettuce or in a sandwich, as desired.

Notes

This recipe makes approximately 8 one-cup servings.

Best served chilled and consumed within 3 days when stored in an airtight container.

Do not freeze, as the yogurt and mayo dressing will separate.

Optionally, toast pecans before adding for enhanced flavor.
