Description
A flavorful Honey Garlic Salmon Skillet Dinner made with tender salmon, crisp vegetables, a sweet garlic glaze, and warm brown rice cooked together in one skillet for an easy and delicious meal.
Ingredients
1½ tablespoons honey
6 cloves garlic, grated, divided
1 tablespoon extra virgin olive oil
4 skinless salmon fillets, 5 ounces each
4 cups broccoli florets
1 red bell pepper, chopped
3 large scallions, sliced, plus extra for garnish
1 medium carrot, peeled and sliced
¼ teaspoon cracked black pepper
½ teaspoon salt, divided
2½ tablespoons tamari mixed with a touch of tamarind
1 tablespoon rice vinegar
1 package microwaveable brown rice
¼ cup unsalted chicken broth

2. Preheat the oven to 400°F. Mix the honey and half of the grated garlic in a small bowl.
3. Heat the olive oil in an oven safe skillet over medium high heat. Brush the salmon fillets with some of the honey garlic mixture.
4. Place the salmon honey side down in the skillet and sear until well browned. Transfer to a plate, browned side up.
5. Add the broccoli, bell pepper, scallions, carrot, remaining garlic, black pepper, and part of the salt to the skillet. Stir until the vegetables begin to soften.
6. Stir in the tamari with tamarind, rice vinegar, brown rice, and chicken broth. Mix well.
7. Bake uncovered for about 10 minutes until the vegetables are nearly tender.
8. Brush the salmon with the remaining honey garlic glaze and sprinkle with the rest of the salt.
9. Nestle the salmon into the rice and vegetables. Bake again until the salmon reaches 120°F, about 6 to 8 minutes.
10. Garnish with extra scallions before serving.

Notes
For the best texture, choose salmon fillets that are similar in thickness.
Microwaveable brown rice shortens prep time and absorbs the flavorful glaze well.
If reheating leftovers, add a splash of chicken broth to restore moisture.
Cut vegetables into uniform pieces so they cook evenly in the skillet.
