Ingredients
2 salmon filets
2 russet potatoes
4 tablespoons honey
10 ounces peas
4 ounces sour cream
Salt and pepper
4 tablespoons butter
1 tablespoon chopped garlic
Neutral oil
Apple cider vinegar
Instructions
1. Scrub and cut potatoes, then boil until fork tender.
2. Drain potatoes, reserving some cooking water, and keep warm.
3. Pat salmon dry, season, and sear skin side down until crisp.
4. Flip salmon and cook briefly until just done.
5. Sauté garlic in skillet, add water, honey, and vinegar to form sauce.
6. Thicken the sauce, finish with butter, and coat salmon.
7. Microwave peas with butter, salt, and pepper.
8. Mash potatoes with sour cream and reserved water.
9. Serve salmon over mashed potatoes with peas on the side.

Use hot potatoes for smooth mashed texture.
Fresh garlic improves the flavor of the sauce.
Adjust sauce sweetness or tang to taste.
