Description

A moist and flavorful honey mustard meatloaf made with lean ground chicken, sweet honey, and tangy mustard. This quick and easy dinner delivers a perfect balance of savory and sweet in just 30 minutes.


Ingredients

2 tablespoons yellow mustard

2 tablespoons honey

1 large egg

1/2 teaspoon kosher salt

1/2 teaspoon black pepper

1 cup ritz cracker crumbs or alcohol-free bread crumbs (use brands like Progresso Plain Bread Crumbs or 365 by Whole Foods Market Organic Bread Crumbs)

1 pound ground chicken

1 tablespoon olive oil or butter for greasing

For the glaze:

1 tablespoon yellow mustard

1 tablespoon honey


Instructions

1. Preheat oven to 350°F (175°C).

2. In a large bowl, combine mustard, honey, egg, salt, pepper, and cracker crumbs. Stir gently to form a base mixture.

3. Add ground chicken and mix well until all ingredients are evenly incorporated.

4. Lightly grease a loaf pan with olive oil or butter, then spread the chicken mixture evenly into the pan.

5. In a small bowl, whisk together mustard and honey for the glaze. Brush half of the glaze over the top of the loaf.

6. Bake uncovered for 25 to 30 minutes, or until internal temperature reaches 165°F (74°C).

7. Brush remaining glaze over the top during the last 10 minutes of baking for a glossy finish.

8. Remove from oven and rest for 5 minutes before slicing. Serve warm with your favorite sides.

Notes

For extra flavor, add chopped parsley or green onions to the mixture.

Avoid overmixing to keep the meatloaf light and tender.

Store leftovers in an airtight container for up to 3 days in the refrigerator or up to 3 months in the freezer.

To reheat, warm slices in a 300°F (150°C) oven for about 10 minutes or microwave covered with a damp paper towel.

Pair with mashed potatoes, roasted green beans, or steamed vegetables for a balanced meal.
