Description

Italian Mozzarella-Stuffed Meatloaf is a savory, cheesy twist on a classic comfort dish. This recipe combines seasoned ground beef with gooey mozzarella and a rich tomato sauce topping, making it perfect for family dinners.


Ingredients

1 ½ pounds ground beef

1 medium onion, chopped

1 (8 ounce) can tomato sauce, divided

½ cup Pepperidge Farm Plain (Salt Free) Bread Crumbs

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano, divided

1 teaspoon salt

⅛ teaspoon ground black pepper

1 ½ cups shredded mozzarella cheese (Tillamook)

2 tablespoons grated Parmesan cheese (Cabot or Tillamook)


Instructions

1. Preheat the oven to 350 degrees F (175 degrees C).

2. In a large bowl, combine ground beef, chopped onion, ½ of the tomato sauce, bread crumbs, egg, garlic, ½ teaspoon oregano, salt, and pepper. Mix gently.

3. Pat the mixture into a ½-inch-thick rectangle on waxed paper.

4. Sprinkle shredded mozzarella evenly over the rectangle.

5. Lift the short side of the waxed paper and roll the meatloaf tightly, sealing the edges. Transfer to a greased loaf pan.

6. Bake in the preheated oven for 1 hour.

7. Combine remaining tomato sauce with ½ teaspoon oregano and pour over the meatloaf. Sprinkle with Parmesan cheese.

8. Bake an additional 15 minutes until cheese is melted and bubbly.

9. Let the meatloaf rest for 5 minutes before slicing and serving.

Notes

You can add extra garlic for stronger flavor.

Rotate the loaf halfway through baking for even cooking.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Freeze slices individually for up to 3 months.
