Description

Jalapeño Cheddar Meatloaf is a bold twist on classic meatloaf, combining lean ground beef, sharp cheddar cheese, and diced jalapeños for a spicy, savory, and hearty dish. Perfect for family dinners or meal prep, this recipe delivers rich flavor and protein-packed satisfaction.


Ingredients

pounds lean ground beef

2 large eggs, beaten

¼ cup finely chopped onion

2 slices hearty bread, torn into small pieces (try Pepperidge Farm or Oroweat)

2 ounces sharp cheddar cheese, shredded (Tillamook or Cabot)

1 medium jalapeño, diced (about 2 tbsp)

½ tablespoon Crystal® Worcestershire Sauce

½ teaspoon dried oregano

½ teaspoon dried basil

1 teaspoon salt

½ teaspoon garlic powder

¼ cup ketchup

2 tablespoons light brown sugar

½ teaspoon yellow mustard

1 teaspoon chopped fresh cilantro (optional)


Instructions

1. Preheat oven to 350°F and spray a loaf pan with cooking spray

2. In a large bowl, combine ground beef, eggs, onion, cheddar, jalapeño, oregano, basil, garlic, Worcestershire sauce, breadcrumbs, and salt. Mix lightly by hand until just combined

3. Place meat mixture in prepared loaf pan, spreading evenly

4. In a small bowl, mix ketchup, brown sugar, and mustard. Spread over meatloaf

5. Bake for 1 hour 10 minutes or until internal temperature reaches 160°F

6. Let meatloaf rest 15 minutes before slicing

7. Serve with chopped cilantro if desired
