Description
This Lemon Sesame Chicken & Asparagus Bake combines tender chicken, crisp asparagus, and a tangy sesame-lemon sauce for a quick and flavorful dinner.
Ingredients
2 tablespoons olive oil
2 bunches asparagus, ends snapped off, chopped into 1-inch pieces
4 cloves garlic, minced
1 pinch salt
1 pinch pepper
2 tablespoons grapeseed oil
5 boneless skinless chicken breasts, cut into 1-inch cubes or thin strips
½ cup Tamari sauce
¼ cup chicken broth or vegetable broth
1 ½ teaspoons cornstarch
¼ cup cold water
1 lemon, juice and zest
Cooked basmati or jasmine rice, optional for serving
Instructions
1. Prepare rice ahead if serving with the dish.
2. Heat olive oil in a wok or skillet until shimmering.
3. Add asparagus and cook 3 to 5 minutes until tender-crisp.
4. Stir in garlic, salt, and pepper for 1 minute, then set aside.
5. Heat grapeseed oil in the same pan, add chicken, and cook 3 to 5 minutes until browned.
6. Transfer chicken to the bowl with asparagus.
7. Add Tamari sauce and broth to the skillet and bring to a boil.
8. Mix cornstarch and cold water in a jar, shake well, then stir into the boiling sauce.
9. Reduce heat and stir until the sauce thickens.
10. Return chicken and asparagus to the skillet, toss to coat evenly.
11. Stir in lemon juice and zest.
12. Serve over rice, noodles, or on its own.
