Description

A juicy and flavorful meatloaf sandwich featuring tender beef, melted cheese, apple butter glaze, and fresh sourdough bread. Perfect for lunch, dinner, or meal prep.


Ingredients

Meatloaf Ingredients:

2 pounds lean ground beef

1/2 cup finely minced onion

1 tablespoon butter

1 teaspoon kosher salt

1/2 cup Musselman’s Apple Butter (+1-2 tablespoons for topping)

2 tablespoons apple cider vinegar

Dash of hot sauce

1 egg, lightly beaten

20 Ritz-style crackers, crushed

Sandwich Ingredients:

8 slices sourdough bread, buttered

8 thin slices Gouda cheese

1/4 cup Musselman’s Apple Butter

1 tablespoon apple cider vinegar

Dash of hot sauce

4 thick slices of meatloaf

4 leaves butter lettuce


Instructions

1. Preheat oven to 350° and spray loaf pan.

2. Sauté onions in butter with salt until soft and translucent.

3. Whisk together apple butter, apple cider vinegar, and hot sauce.

4. Combine cooked onions, ground beef, egg, crushed crackers, and apple butter mixture.

5. Press mixture into prepared loaf pan and brush with additional apple butter.

6. Bake for 1 hour or until fully cooked, then cool slightly and slice.

7. Butter bread slices and preheat skillet over medium-high heat.

8. Layer each slice with cheese, meatloaf, apple butter glaze, and lettuce.

9. Top with remaining bread and press gently.

10. Grill sandwiches until bread is golden and cheese is melted, flipping carefully.

Notes

Use thick meatloaf slices for a hearty bite.

Apply sauces directly on meatloaf to avoid soggy bread.

Reheat sandwiches in a skillet or oven to maintain crispness.

Adjust hot sauce in apple butter glaze according to taste.
