Description

This meatloaf with oats instead of breadcrumbs is a protein-packed, flavorful twist on a classic comfort food. Using lean ground beef, oats, and fresh vegetables, it creates a tender, moist loaf perfect for family meals or meal prep.


Ingredients

2 pounds lean ground beef 80/20 ground chuck works best

3/4 cup Quaker oats or any similar brand

2 large eggs

1/2 cup ketchup plus more for glaze

1 tablespoon Crystal Worcestershire Sauce (alcohol-free)

1 small onion, chopped

2 garlic cloves, finely chopped

1 teaspoon sea salt

1/2 teaspoon black pepper


Instructions

1. Preheat the oven to 350 degrees Fahrenheit.

2. In a large mixing bowl, lightly beat the eggs.

3. Add ground beef, oats, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper to the bowl.

4. Mix ingredients gently by hand until just combined.

5. Form the mixture into a loaf shape about 2 inches thick in a greased or foil-lined baking dish.

6. Spread a thin layer of ketchup on top of the loaf.

7. Bake uncovered for 1 hour or until the internal temperature reaches 160 degrees Fahrenheit.

8. Optionally, add more ketchup in the last 10 minutes for a thicker glaze.

9. Allow the meatloaf to rest for 5-10 minutes before slicing.

Notes

Do not overmix the meat mixture to keep the loaf tender.

Place 2 slices of bread under the loaf to absorb excess grease.

Lining the baking dish with foil simplifies cleanup and helps even cooking.
