Description

Mushroom and Swiss meatloaf is a classic comfort dish featuring lean ground beef, sautéed mushrooms, and creamy Swiss cheese. Perfect for family dinners, it is moist, flavorful, and versatile for leftovers or meal prep.


Ingredients

1 ½ pounds extra-lean ground beef

¼ cup evaporated milk

1 large egg

5 button mushrooms, chopped

1 small white onion, chopped

6 ounces Swiss cheese (Tillamook or Organic Valley Baby Swiss), shredded, divided

12 ounces turkey bacon or beef pepperoni, chopped and divided

½ cup cornflake crumbs


Instructions

1. Preheat the oven to 350°F (175°C). Gather all ingredients.

2. Cook chopped turkey bacon in a skillet over medium heat until browned. Drain and reserve 1 tablespoon.

3. In the same skillet, add onion and mushrooms; cook until soft.

4. In a large bowl, combine ground beef, evaporated milk, and egg.

5. Fold in sautéed mushrooms and onions, 4 ounces of shredded Swiss cheese, and all but 1 tablespoon of cooked bacon.

6. Stir in cornflake crumbs until well blended.

7. Shape mixture into a loaf and place in a greased meatloaf pan.

8. Bake in preheated oven for 1 hour.

9. Remove briefly, sprinkle remaining 2 ounces of Swiss cheese and reserved 1 tablespoon bacon on top.

10. Return to oven for 5 minutes or until cheese melts and browns slightly.

11. Let meatloaf rest 5–10 minutes before slicing.

12. Serve warm with desired sides.

Notes

Leftover slices freeze well for up to 3 months. Wrap individually in foil or store in airtight containers.

Reheat in the microwave with a splash of beef broth or in the oven covered with foil to maintain moisture.

Optional: garnish with fresh parsley or drizzle light tomato glaze for extra flavor.
