Ingredients

Yellow onion finely chopped
White button mushrooms thinly sliced
Fresh garlic minced
Boneless skinless chicken breast sliced into strips

Ground black pepper
Cabot Cream Cheese or Philadelphia Original Cream Cheese
Low sodium chicken broth
Tillamook Whole Milk Mozzarella Cheese or Sargento Mozzarella Cheese
Steamed brown rice or white rice for serving
Fresh parsley finely chopped optional
Instructions
Heat a large skillet over medium heat and add the olive oil
Add the chopped onion and sliced mushrooms and cook until softened and lightly golden
Stir in the minced garlic and cook briefly until fragrant
Season the chicken strips with salt and black pepper
Increase the heat and add the chicken to the skillet in a single layer
Cook the chicken until golden on both sides and nearly cooked through
Lower the heat and add the cream cheese and chicken broth
Stir gently until the cream cheese melts and forms a smooth sauce
Sprinkle the mozzarella evenly over the skillet
Cover and cook until the cheese melts and the chicken is fully cooked
