Description
Crispy, golden oven-fried chicken thighs with a seasoned crumb crust. All the crunch you crave without deep frying.
Ingredients
12 chicken thighs, patted dry
1 cup all-purpose flour
Salt and pepper to taste
1 cup Italian seasoned bread crumbs
3 eggs
1/2 cup vegetable oil
1 teaspoon paprika
Instructions
1. Preheat the oven to 350 degrees F, 175 degrees C.
2. Place flour in a shallow bowl and season with salt and pepper. Put bread crumbs in a second shallow bowl. Beat eggs in a third bowl.
3. Dredge chicken, one piece at a time, in the flour, then the egg, then the bread crumbs until all pieces are coated.
4. Pour the oil into a large baking dish. Add the breaded chicken thighs in a single layer and sprinkle with paprika.
5. Bake for 30 minutes. Turn the pieces over and bake another 30 minutes, or until the chicken is golden and the internal temperature reaches 165 degrees F.
6. Remove from the oven and drain briefly on paper towels. Serve hot and enjoy.
Notes
For extra crunch, lightly mist the tops with cooking spray before baking. Let the chicken rest 5 minutes before serving.
