A fun and easy Pancake and Sausage Skewers Board featuring fluffy mini pancakes, savory turkey sausage patties, and a warm spiced maple syrup drizzle.


Ingredients

Spiced Maple Syrup:

4 tablespoons unsalted butter

1/2 cup maple syrup

1 teaspoon red pepper flakes

1/2 teaspoon salt

Mini Pancakes:

1 cup all purpose flour

1/2 tablespoon brown sugar

1/4 teaspoon baking powder

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons sour cream

2 tablespoons unsalted butter, melted

2 teaspoons maple syrup

For Cooking:

1 tablespoon olive oil

1 pound turkey breakfast sausage

13 bamboo skewers


Instructions

2. Melt the butter in a saucepan over medium low heat. Stir in maple syrup, red pepper flakes, and salt.

3. Bring to a gentle boil and cook for several minutes until slightly thickened. Remove from heat and let rest for at least 30 minutes.

4. In a large bowl whisk flour, brown sugar, baking powder, and salt.

5. In a separate bowl whisk buttermilk, egg, sour cream, melted butter, and maple syrup.

6. Combine the wet mixture with the dry mixture and stir gently until slightly lumpy. Let sit for 10 minutes.

7. Heat a nonstick skillet over medium heat and drop small spoonfuls of batter to form one inch pancakes. Cook until golden on both sides.

8. Add olive oil to the skillet and form the turkey sausage into one inch patties. Cook until browned and fully cooked.

9. Thread three mini pancakes and two sausage patties onto each bamboo skewer.

Mini pancakes cook very quickly so monitor heat to avoid burning.

Use a small scoop for evenly sized pancakes.
