Ingredients
2 tsp vegetable oil
1 onion, diced
2 garlic cloves, minced
1 carrot, shredded
2 slices bread, finely chopped (choose alcohol-free/US brands)
1 egg
1/2 cup milk
1 tbsp Dijon mustard
1 tbsp Crystal Worcestershire sauce (or alcohol-free alternative)
1/2 tsp salt
1/4 tsp black pepper
1 1/2 lb lean ground beef
1/3 cup Pepper Jelly Glaze (see instructions)
Instructions
1. Preheat oven to 350°F (180°C). Line a baking sheet with foil or prepare a loaf pan.
2. Heat vegetable oil in a skillet over medium-high heat. Cook onion, garlic, and carrot for 5 minutes until softened.
3. In a medium bowl, beat egg with milk. Stir in bread, Dijon mustard, Worcestershire sauce, salt, and pepper.
4. Add ground beef and sautéed vegetables. Mix gently and form into a loaf shape on baking sheet or in loaf pan.
5. Top meatloaf with 1/3 cup Pepper Jelly Glaze.
6. Bake in preheated oven for 55-70 minutes or until internal temperature reaches 160°F (71°C).
7. Remove from oven and tent with foil. Let rest 10 minutes before slicing.
8. Serve slices with remaining Pepper Jelly Glaze and your favorite sides.
Notes
Do not overmix the meat to maintain a tender texture.
Leftover meatloaf can be stored in the refrigerator for up to 3 days or frozen for up to 1 month.
Use a serrated knife for clean slices.
Experiment with herbs like parsley or thyme to enhance flavor.
