Description

Rabbit meatloaf is a tender, flavorful alternative to traditional meatloaf, combining lean rabbit meat with fresh vegetables and aromatic seasonings for a wholesome, satisfying dish.


Ingredients

1 pound ground rabbit meat

1 cup onion, finely chopped

2 tsp garlic, minced

1 medium carrot, grated

1 stalk celery, finely chopped

1 cup Kinnikinnick or Schär breadcrumbs

1 large egg

2 tbs Crystal Worcestershire Sauce or soy sauce-tamarind blend

2 tbs fresh parsley, chopped

1 tsp salt

1 tsp black pepper

1 tsp dried thyme

1 tbs ketchup


Instructions

1. Preheat your oven to 350°F (175°C).

2. In a large bowl, combine the ground rabbit meat, chopped onion, minced garlic, grated carrot, chopped celery, breadcrumbs, egg, Worcestershire sauce alternative, parsley, salt, black pepper, and thyme. Mix until well combined.

3. Transfer the mixture into a loaf pan and shape it into a loaf. Spread ketchup on top for added flavor.

4. Bake in the preheated oven for 1 hour, or until the meatloaf reaches an internal temperature of 160°F (70°C).

5. Let the meatloaf rest for 10 minutes before slicing. Serve warm.

Notes

Use fresh herbs for better aroma, or substitute dried if unavailable.

Avoid overmixing the meat to prevent a dense texture.

Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months.

Serve with roasted vegetables, mashed potatoes, or a fresh salad.

For extra flavor, baste with pan juices or a light tomato-based sauce.
