Description
These sesame chicken lettuce wraps with peanut sauce are a light yet flavorful dish. Juicy ground chicken is cooked with vegetables, seasoned with chili garlic sauce, and paired with a creamy nutty peanut sauce. Wrapped in crisp lettuce leaves, they make the perfect quick dinner, lunch, or appetizer.
Ingredients
1 pound ground chicken
1 Tbsp vegetable oil
1 yellow onion, finely chopped
4 cloves garlic, minced
1 Tbsp chopped ginger
1 Tbsp sesame oil
1 (3.5-ounce) package shiitake mushrooms, chopped
1 julienne-cut carrot
1/4 cup clean sauce alternative (soy-free hoisin style blend with peanut butter, honey, and rice vinegar)
1 Tbsp chili garlic sauce
2 Tbsp chopped cilantro
4 green onions, sliced
1 head Boston lettuce
Peanut Sauce:
3 Tbsp crunchy peanut butter
2 tsp brown sugar
1 Tbsp soy sauce alternative (alcohol-free)
1 Tbsp freshly squeezed lemon juice
1 tsp chili garlic sauce
1 tsp freshly grated ginger
2–3 Tbsp water, to thin as needed
Instructions
1. Whisk together all ingredients for the peanut sauce, adding a little water until desired consistency is reached.
2. Chop all vegetables and set aside.
3. Heat vegetable oil and sesame oil in a large skillet or wok over medium-high heat.
4. Add onions and sauté until translucent.
5. Add ground chicken and cook, breaking it up with a spatula, for about 5 minutes.
6. Stir in garlic, ginger, mushrooms, and carrots, and continue to cook for another 5 minutes.
7. Mix in chili garlic sauce and hoisin-style blend, stirring until chicken is fully cooked and evenly coated.
8. Spoon the chicken mixture into lettuce leaves.
9. Drizzle peanut sauce over the filling.
10. Garnish with cilantro and green onions before serving.
Notes
Boston lettuce works best, but romaine or butter lettuce also work well.
The chicken filling can also be served over rice bowls for a heartier meal.
Peanut sauce can be made ahead of time and stored in the fridge for up to 5 days.
Adjust chili garlic sauce to your preferred spice level.
