Description
These Sesame Chicken Stuffed Zucchini Boats combine tender zucchini with a flavorful sesame chicken filling and melted mozzarella cheese for a healthy, satisfying meal. Perfect for weeknight dinners, meal prep, or casual gatherings.
Ingredients
4 medium zucchinis
2 tablespoons Kikkoman® Sesame Oil
⅓ cup Kikkoman® Soy Sauce (alcohol-free brands: San-J Tamari Gluten Free, Kikkoman Less Sodium, or Bragg Liquid Aminos)
1 tablespoon brown sugar
1 teaspoon garlic, minced
2 teaspoons ginger, minced
½ teaspoon chili flakes
1-pound ground chicken
⅓ cup red onion, chopped
Shredded mozzarella, to taste
¼ cup cilantro, chopped
1 teaspoon toasted sesame seeds
Instructions
1. Preheat oven to 425ºF. Slice zucchini in half lengthwise and scoop out seeds using a spoon. Trim ends if necessary for pan fit. Place zucchini in a 9×13 inch oven-safe baking pan and bake for 15 minutes.
2. In a small bowl, mix sesame oil, soy sauce, brown sugar, garlic, ginger, and chili flakes. Set aside.
3. Heat a medium nonstick pan over medium-high heat. Add ground chicken and cook for 8 minutes, discarding any liquid.
4. Add the prepared sauce to the chicken and cook for 30 seconds more, stirring to coat evenly.
5. Scoop the chicken mixture into baked zucchini halves. Top with shredded mozzarella and red onion.
6. Return to the oven and bake for 10 minutes. Switch to broil and broil for 3 minutes until cheese is bubbly and lightly golden.
7. Remove from oven and let cool 5 minutes. Sprinkle with cilantro and toasted sesame seeds before serving.
Notes
Pre-baking zucchini prevents sogginess and ensures even cooking.
To control moisture, lightly salt zucchini halves before baking and pat dry.
Chicken filling can be prepared a day ahead and stored in the refrigerator.
Leftover zucchini boats can be stored for up to 3 days and reheated in the oven for best texture.
Adjust chili flakes according to spice preference. Add lime juice or extra sesame oil for enhanced flavor.
