Ingredients
1 tablespoon olive oil
1 skinless, boneless chicken breast half, cut into cubes
1 large sweet potato, peeled and cut into 1/2-inch pieces
1 tablespoon minced fresh sage
1 pear, peeled, cored, and cut into 1/2-inch pieces
1/2 cup water
2 cups baby spinach
1/4 cup chopped toasted hazelnuts
Salt and ground black pepper to taste
Instructions
1. Heat olive oil in a skillet over medium heat. Add chicken cubes and cook, stirring, until browned on all sides, about 3 to 5 minutes. Remove chicken and set aside.
2. Cook sweet potato cubes in the same skillet over medium heat until slightly browned, 5 to 10 minutes. Return chicken to skillet.
3. Remove lid, add baby spinach, and cook while stirring occasionally until wilted, about 5 minutes.
4. Stir in toasted hazelnuts. Season with salt and ground black pepper to taste. Serve hot.
