Description

A wholesome, protein-packed dish featuring grilled chicken breast, roasted cauliflower steaks, and creamy sesame dressing, topped with cashews and multicolor sesame seeds for a perfect balance of flavor and texture.


Ingredients

13 oz boneless skinless chicken breasts

12 oz cauliflower florets (cut into thick steaks)

2 oz sliced red onion

1 tsp garlic and ginger seasoning

2 fl oz creamy roasted sesame dressing

1 oz roasted salted cashews

1 tsp multicolor sesame seeds

2 tsp olive oil

Salt and black pepper to taste


Instructions

1. Preheat grill or oven to 400°F (200°C).

2. Slice cauliflower into thick steaks and toss with red onion, garlic and ginger seasoning, olive oil, salt, and pepper.

3. Arrange cauliflower and onion on grill pan or baking sheet. Roast or grill for 20 minutes, flipping halfway, until golden and tender.

4. Lightly brush chicken breasts with olive oil and season with salt, pepper, and a pinch of garlic and ginger seasoning.

5. Grill chicken for 5 to 7 minutes per side or until internal temperature reaches 165°F (74°C).

6. Remove chicken from grill and let it rest for a few minutes before slicing.

7. Drizzle creamy roasted sesame dressing over the chicken and roasted cauliflower.

8. Top with roasted cashews and multicolor sesame seeds.

9. Serve immediately while warm.

Notes

For extra flavor, toast the cashews briefly in a dry skillet before topping the dish.

A squeeze of lemon juice or a sprinkle of scallions adds brightness.

Store leftovers in airtight containers for up to three days in the refrigerator.

Reheat in the oven or air fryer to maintain crisp texture.

Serve with jasmine rice, quinoa, or a light cucumber salad for a balanced meal.
