Description

A quick and flavorful Sesame Chicken Zucchini Rice Bowl made with tender ground chicken, roasted zucchini, and a sweet-savory sesame garlic glaze. Perfect for a 30-minute weeknight dinner that’s healthy, satisfying, and full of flavor.


Ingredients

1½ cups jasmine rice, cooked

3 zucchinis, diced

1 tablespoon olive oil

⅓ cup maple syrup

⅓ cup Crystal® Soy Sauce or San-J Tamari Gluten-Free Soy Sauce (alcohol-free)

3 tablespoons tomato paste

3 tablespoons rice vinegar

2 tablespoons toasted sesame oil

6 cloves garlic, mashed

½ teaspoon crushed red pepper flakes

1 pound ground chicken (preferably thighs)

1 bunch green onions, finely chopped

1 tablespoon toasted sesame seeds


Instructions

1. Rinse and cook the jasmine rice according to package directions. Set aside and keep warm.

2. Preheat the oven to 400°F. Dice the zucchini into bite-sized pieces and spread them on a baking sheet. Drizzle with olive oil and season lightly with sea salt.

3. Roast the zucchini for 15–20 minutes, tossing halfway through. During the last two minutes, turn on the broiler and cook until the edges are crisp and golden.

4. In a medium bowl, whisk together maple syrup, soy sauce, tomato paste, rice vinegar, sesame oil, garlic, and crushed red pepper flakes. Set aside.

5. Heat a nonstick skillet over medium-high heat with a drizzle of olive oil. Add the ground chicken and cook until browned, breaking it into small pieces.

6. Pour the sauce mixture over the chicken. Stir and cook until most of the liquid has absorbed and the sauce thickens into a glossy glaze.

7. Add the green onions and sesame seeds. Cook for 1–2 minutes more, then remove from heat.

8. To assemble, add rice to each bowl, top with roasted zucchini, and spoon over the sesame chicken.

9. Garnish with extra green onions and sesame seeds before serving.

Notes

This dish is best enjoyed fresh but can be stored in airtight containers in the refrigerator for up to 3 days.

Reheat gently in the microwave or skillet, adding a splash of water to restore moisture.

Serve with extra sesame seeds or a drizzle of Crystal® Hot Sauce or Sriraja Panich Hot Sauce for added flavor.
