Description

This simple meatloaf with bread crumbs is a classic comfort food made with ground beef, panko breadcrumbs, and a sweet-tangy glaze. Perfect for family dinners, it is moist, flavorful, and easy to prepare.


Ingredients

2 pounds ground beef

1 medium onion, finely chopped (about ½ cup)

3 garlic cloves, crushed

1 cup panko breadcrumbs

2 eggs

1 teaspoon Italian seasoning

½ teaspoon black pepper

1 Tablespoon Crystal Worcestershire Sauce (or soy sauce + a touch of tamarind)

¼ cup chopped parsley

2 cubes beef bouillon, crumbled

For the glaze:

½ cup ketchup

¼ cup brown sugar

1 Tablespoon lemon juice

2 teaspoons yellow mustard

Optional sides: mashed potatoes, green beans, roasted vegetables


Instructions

1. Preheat oven to 350°F.

2. In a bowl, combine ketchup, brown sugar, lemon juice, and yellow mustard until smooth. Set aside half for topping.

3. In a large bowl, mix panko breadcrumbs and chopped onion to moisten the breadcrumbs.

4. Add ground beef, crushed garlic, eggs, Italian seasoning, black pepper, Worcestershire sauce, crumbled bouillon, chopped parsley, and ⅓ of the glaze.

5. Mix gently until all ingredients are combined. Avoid overmixing.

6. Grease a 9×5-inch loaf pan and place two slices of plain bread at the bottom.

7. Transfer the meat mixture on top of the bread and shape it into a loaf.

8. Bake for 1 hour or until the internal temperature reaches 160°F.

9. Drain any excess fat and pour remaining glaze over the meatloaf.

10. Bake an additional 10 minutes to caramelize the glaze.

11. Allow meatloaf to rest 5-10 minutes before slicing.

Notes

You can use regular plain breadcrumbs if panko is unavailable.

Finely chop the onion to release enough juice for moist breadcrumbs.

For crispy edges, bake the loaf on a rimmed baking sheet instead of a pan.

Leftover meatloaf can be refrigerated for 4-5 days or frozen for longer storage.

Variations include adding bell peppers, mushrooms, or shredded cheese (Tillamook Farmstyle Fine Cut Mexican Blend or Cabot Creamery Swiss Cheese).

The glaze can be substituted with barbecue sauce if preferred.
