Description

A flavorful and easy slow cooker meal featuring tender chicken breasts simmered in a sweet and savory sesame teriyaki sauce. Perfect for busy weeknights or meal prep, this dish delivers restaurant-quality taste with minimal effort.


Ingredients

1 1/2 pounds boneless skinless chicken breasts

2 teaspoons garlic, minced

2 teaspoons ginger, minced

1/4 cup honey

3 tablespoons brown sugar

1/2 cup low sodium soy sauce (use Kikkoman or San-J naturally brewed soy sauce)

2 teaspoons toasted sesame oil

2 tablespoons rice vinegar

1/4 cup cold water

2 tablespoons cornstarch

1 tablespoon sesame seeds

2 tablespoons sliced green onions


Instructions

1. Place the chicken breasts in a slow cooker.

2. In a small bowl, whisk together the garlic, ginger, honey, brown sugar, soy sauce, sesame oil, and rice vinegar.

3. Pour the soy sauce mixture evenly over the chicken.

4. Cover and cook on HIGH for 3 hours or LOW for 5 to 6 hours.

5. Remove the chicken from the slow cooker and shred it with two forks.

6. Strain the remaining sauce into a saucepan and bring it to a simmer over medium-high heat.

7. In a small bowl, mix the cornstarch with the cold water until dissolved.

8. Pour the cornstarch mixture into the saucepan, stirring constantly until the sauce thickens.

9. Add the shredded chicken back to the pan and toss to coat with the sauce.

10. Sprinkle with sesame seeds and sliced green onions before serving.

Notes

Serve over steamed jasmine rice or stir-fried vegetables for a complete meal.

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months.

Reheat gently on the stovetop or in the microwave, adding a splash of water if the sauce becomes too thick.

For added flavor, toast sesame seeds before sprinkling and drizzle a few drops of sesame oil before serving.
