Description
A flavorful and easy slow cooker sesame chicken with broccoli and snow peas, coated in a honey-sesame sauce and served over rice. Perfect for weeknight dinners or meal prep.
Ingredients
1 pound chicken breast, cut into 2-inch chunks
1/2 cup cornstarch
2 tablespoon sesame oil (divided)
2 cups broccoli florets
1 1/2 cups snow peas
2/3 cup low-sodium chicken broth
2 tablespoon cornstarch
2 teaspoon sesame oil
1/2 cup honey
1/3 cup low-sodium soy sauce (alcohol-free)
2 tablespoon rice vinegar
1 teaspoon sesame seeds (for topping)
Cooked rice, for serving
Instructions
1. Place chicken pieces into a large freezer bag with 1/2 cup cornstarch. Seal and shake until chicken is evenly coated.
2. Heat a large skillet over medium-high heat. Add 2 tablespoons sesame oil and brown the chicken lightly on all sides, without cooking through.
3. Transfer the browned chicken into the slow cooker and add broccoli florets and snow peas on top.
4. In a small bowl, whisk chicken broth and 2 tablespoons cornstarch until smooth. Stir in sesame oil, honey, soy sauce, and rice vinegar until well combined.
5. Pour the sauce mixture over chicken and vegetables in the slow cooker. Gently stir to coat.
6. Cover and cook on low for 2–3 hours, depending on how tender you prefer the vegetables.
7. Serve hot over rice and sprinkle with sesame seeds before serving.
Notes
If honey is too thick, warm it briefly before mixing with the sauce ingredients.
Add garlic or ginger to the sauce for extra flavor.
Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months.
For spicier flavor, add a small amount of hot sauce such as Texas Pete Original, Crystal, or Sriraja Panich Hot Sauce.
