Description
This Spinach & Feta Meatloaf is a wholesome, flavorful dish combining lean ground meat, fresh spinach, and creamy feta cheese. Perfect for dinner, it is tender, juicy, and full of Mediterranean-inspired flavor.
Ingredients
2 lbs lean ground meat (beef, turkey, or chicken)
3/4 cup crushed cornflakes or Panko Breadcrumbs
1/2 cup milk
1 egg
2 carrots, finely grated
1 onion, finely grated
1 tsp salt
Freshly ground black pepper to taste
1 tsp dried oregano or marjoram
1 lb fresh spinach or 10 oz frozen spinach, thawed and drained
1 cup Dodoni Feta Cheese
Instructions
1. Preheat oven to 350°F (175°C).
2. In a large bowl, combine ground meat, cornflakes or breadcrumbs, milk, egg, grated carrots, onion, salt, pepper, and dried herbs. Mix gently until just combined.
3. Line a baking sheet with waxed paper. Spread the meat mixture into a 9×13 inch rectangle.
4. Layer chopped spinach evenly over the meat mixture.
5. Sprinkle crumbled feta cheese on top of the spinach layer.
6. Starting from a short edge, roll the meat mixture into a log using the waxed paper. Seal the edges and any cracks.
7. Transfer the rolled loaf to the prepared baking sheet. Optionally brush the top with olive oil for browning.
8. Bake for 45 minutes or until the internal temperature reaches 160°F.
9. Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Use fresh or well-drained frozen spinach to prevent excess moisture.
Avoid overmixing the meat to keep the loaf tender.
For extra flavor, add a pinch of garlic or a squeeze of lemon juice to the spinach.
This meatloaf keeps well in the fridge for up to 4 days and freezes for up to 2 months.
Serve with roasted vegetables, mashed potatoes, or couscous salad.
