Description

This Stuffed Bell Pepper Meatloaf combines juicy ground beef, savory breadcrumbs, and rich tomato sauce baked inside tender bell peppers for a cozy, flavor-packed dinner that’s easy to make and family-friendly.


Ingredients

1 lb ground beef

1/2 cup Panko bread crumbs (try 365 by Whole Foods Market Organic Breadcrumbs or Ian’s Original Panko Breadcrumbs)

1/4 cup ketchup

3 tbsp dried minced onion

2 tsp Crystal Worcestershire Sauce or Annie’s Organic Worcestershire Sauce

1 egg, beaten

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

5 medium green bell peppers, tops removed and seeds discarded

15 oz crushed tomatoes

1/4 cup grated Parmesan cheese (Cabot Shredded Parmesan Cheese or Tillamook Parmesan Cheese)


Instructions

1. Preheat oven to 350°F (175°C).

2. In a large mixing bowl, combine ground beef, breadcrumbs, ketchup, Worcestershire sauce, egg, garlic powder, salt, pepper, and minced onion. Mix gently until just combined.

3. Spread half of the crushed tomatoes evenly on the bottom of a square baking dish.

4. Prepare the bell peppers by slicing off tops and removing seeds and membranes. Rinse and dry them.

5. Arrange cleaned peppers upright in the dish over the tomato layer.

6. Divide the meat mixture evenly among the peppers, pressing lightly to fill.

7. Spread remaining crushed tomatoes on top of the stuffed peppers.

8. Bake uncovered for 50 minutes.

9. Remove from oven, sprinkle Parmesan cheese over each pepper, and bake an additional 10 minutes until cheese melts and lightly browns.

10. Allow peppers to cool slightly before serving.

Notes

For softer peppers, blanch them in boiling water for 2 minutes before stuffing.

Use lean ground beef for less grease and a lighter texture.

Add 1 tablespoon of broth to the meat mixture for extra moisture.

Store leftovers in an airtight container for up to 3 days or freeze up to 2 months.

To reheat, bake at 325°F for 15 minutes or microwave for 1–2 minutes.

Pair with garlic bread or a light garden salad for a complete meal.
