Description
This Swedish Meatball Meatloaf combines the comforting flavors of creamy Swedish meatballs with the hearty texture of classic meatloaf. Made with ground beef, mashed potatoes, and a rich gravy, this dish is tender, flavorful, and perfect for any dinner table.
Ingredients
Meatloaf:
½ yellow onion, peeled and minced
2 lb ground beef
2 large eggs
1 cup dried bread crumbs (Pepperidge Farm Plain, 365 Whole Foods, or Ian’s Original Panko)
1 cup mashed potatoes, room temperature or chilled (prepared from instant or fresh)
2 tsp salt
2 tsp white pepper
2 tsp allspice
2 Tbsp butter, softened
Gravy:
2 Tbsp unsalted butter
2 Tbsp all-purpose flour
2 cups beef broth
1 tsp Crystal Worcestershire Sauce
1 tsp Kikkoman Less Sodium Soy Sauce
½ tsp salt (adjust to taste)
½ tsp ground white pepper
¼ tsp freshly ground nutmeg
½ cup Daisy Sour Cream or Tillamook Sour Cream
⅓ cup minced fresh parsley
Instructions
1. Preheat oven to 350°F.
2. In a large bowl or stand mixer with paddle attachment, add minced onion, ground beef, and eggs.
3. Add bread crumbs, mashed potatoes, salt, white pepper, allspice, and softened butter.
4. Mix gently until just combined. Do not overmix to avoid a dense loaf.
5. Line a baking sheet with foil and lightly coat with butter or olive oil.
6. Shape the mixture into an oval loaf about 6×10 inches and 3 inches high.
7. If prepared ahead, wrap and refrigerate up to 24 hours. Let rest at room temperature for 1 hour before baking.
8. Bake for 75 to 80 minutes or until internal temperature reaches 155°F. Let rest for 10 minutes before slicing.
9. While baking, prepare the gravy. In a saucepan, melt butter and stir in flour for 2 minutes to form a roux.
10. Gradually whisk in beef broth until smooth and thickened.
11. Add Crystal Worcestershire Sauce, Kikkoman Soy Sauce, salt, white pepper, and nutmeg. Stir well.
12. Remove from heat and let cool slightly. Stir in sour cream and parsley until smooth.
13. Slice meatloaf, pour gravy over the top, and garnish with fresh parsley.
14. Serve warm with mashed potatoes, roasted vegetables, or lingonberry jam.
Notes
For extra moisture, brush melted butter on top before baking.
Avoid overmixing the meat to keep it tender.
Use cold ingredients for best texture.
Reheat gently in the oven or on the stovetop with a little gravy to maintain moisture.
Pairs beautifully with mashed potatoes or egg noodles.
