Ingredients
1 lb lean ground beef (organic grass-fed if possible)
4 slices bread, crumbled
1/2 cup diced pineapple
1/4 cup pineapple Greek yogurt (e.g., Chobani, FAGE Total, or Dannon, alcohol-free)
2 tsp minced garlic
1 tsp alcohol-free soy sauce (Kikkoman Naturally Brewed or San-J Tamari)
1 tsp honey
1 tsp molasses
3 slices turkey bacon (Applegate Naturals or Oscar Mayer)
Potatoes for mashing
Sauce/Gravy:
1/2 cup Island Teriyaki marinade
2 Tbsp pineapple juice
1 Tbsp water
1 Tbsp flour
Instructions
1. Preheat oven to 350°F
2. In a large mixing bowl, combine ground beef, crumbled bread, diced pineapple, pineapple Greek yogurt, minced garlic, soy sauce, honey, and molasses. Mix gently
3. Form mixture into a loaf and place on a sprayed aluminum foil-lined baking tray
4. Top loaf with turkey bacon slices
5. Bake at 350°F for 40 minutes, then increase oven to 375°F and bake for another 20 minutes until golden brown
6. Meanwhile, prepare sauce by heating Island Teriyaki marinade and pineapple juice over medium-low heat
7. Slowly whisk in flour until sauce thickens
8. Allow meatloaf to rest for 10 minutes, slice into portions
9. Drizzle teriyaki pineapple sauce over slices and serve with mashed potatoes
