Ingredients

Cod fillets or another firm white fish cut into large pieces

Fine sea salt

Freshly ground black pepper

Fresh lime juice plus lime wedges for serving

Olive oil or palm oil

Yellow onion finely chopped

Red bell pepper diced

Green bell pepper diced

Yellow bell pepper diced

Celery stalk finely chopped

Fresh garlic minced

Fresh ginger minced

Seafood seasoning such as Old Bay

Roasted tomatoes with juices

Green onions chopped using only the green parts

Full fat coconut milk


Instructions

1. Pat the fish dry with paper towels and season with salt and black pepper then gently rub with fresh lime juice and set aside

2. Warm the oil in a Dutch oven over medium heat until shimmering

3. Add the onion bell peppers and celery and cook while stirring until slightly softened and fragrant

4. Stir in the garlic ginger and seafood seasoning and cook gently until aromatic

5. Add the roasted tomatoes and green onions then bring the mixture to a gentle simmer

6. Place the fish pieces on top of the vegetables and pour the coconut milk evenly over everything

7. Bring the soup back to a gentle simmer then lower the heat cover and cook until the fish is tender and opaque

8. Taste and adjust seasoning with additional salt or lime juice before serving
